Iced Coffee for a Friend

When you have a guest over for coffee, you want everything thing to be “just so”.

Brew your coffee the night before using good-quality coffee beans, and make it very strong as it’ll be diluted with ice and milk. That way, it can come to room temperature by the time the morning comes around. As always, add cream (milk), sugar, simple syrup to your taste!

dievca’s friend likes to add simple syrup to her brew, so dievca will be making her own syrup – directions below.

INGREDIENTS:
1/2 cup sugar
1/2 teaspoon vanilla extract
1 cup coffee, at room temperature
2 tablespoons half and half*, or more, to taste

DIRECTIONS:
To make the simple syrup, combine sugar and 1 cup water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Let cool completely and stir in vanilla extract; set aside.
Serve coffee over ice with half & half and simple syrup, to taste.

Missing Master


It’s TMI – so no one tells you directly (something of use)

No one talks about peri-menopause. No one talks about colonoscopies.
For both topics, there are “hints” and “innuendo” – interspersed with potty humor (colonoscopy) or the suggestion of mental instability (perimenopause).

dievca is looking at both topics straight in the eye. One came to the attention of the other this week….

The colonoscopy prep is tedious. Here are some things of use to help one get through it:

  • Chill your prep solution as long as you can before drinking
  • Don’t sniff the prep solution
  • Don’t swish the solution in your mouth because you are pondering swallowing
  • Use a straw to keep the texture and salty and sweet taste away from your tongue
  • Take small to medium sips
  • Swallow as fast as you can to limit the taste in the mouth
  • Take a small sip of water/clear fluid to dilute and rinse the taste from your mouth
  • If you feel nauseous, take longer pauses between sips – even if you go beyond the time limit for drinking the prep
  • If you feel like you need something more substantial in your stomach than liquids, suck on hard clear candies, eat light-colored Jello, apple sauce, and Italian ice. No red or purple colors.
  • Keep a cream available for a sore bum
  • If everything coming out stays neon yellow – don’t panic. As long as its clear, you are ok.
  • Finish the prep as best you can, but know that if you throw some up – it is not a problem as long as emissions are clear
  • Your blood pressure is going to be high due to dehydration, don’t panic
  • Schedule the procedure in the morning, so you don’t have to wait if someone before you has a problem and you can get to your caffeine as soon as possible after the surgery.

For the Ladies:

Perimenopause?
When dievca checked in for the procedure – they insisted on her taking a pregnancy test (!)…..on the hint that she still gets periods. That’s where perimenopause rears its head.  How old are the people getting their 1st colonoscopy? In their 50’s – when does perimenopause start? late 40’s early 50’s on the average.  The question, “Do you still get your period?”, can be a loaded question and awkward to answer~ Be aware. It’s tough to pee in a cup when you are dehydrated.

The procedure itself is quite simple and your a** does not hang out for everyone to see.

A side note: A close friend’s sister died at 40 from colon cancer. dievca’s friend was constantly on people to get a colonoscopy ASAP. Sadly, that friend was the one who beat gallbladder cancer only to die from pancreatic cancer at 50. dievca finally honored her promise to her friend, she knows her friend was watching. All clear.

Coffee on the Upper Eastside


dievca took a friend to an early morning outpatient medical procedure. One is not allowed to sit in the waiting room for the pick-up, so dievca wandered down to the East River to enjoy her coffee. An excellent choice.

Roadside Farm stand – Something of Use – NYC style

dievca remembers stopping by farm stands in the Midwestern Summers to buy fresh produce. There was even a place that dievca’s Mother found to dig up and buy mushrooms – a dark, musty space with soil.
As she was driving to the Delaware River dievca spotted similar stands along the road in New Jersey, she forgot to stop on her way back to NYC.

The NYC farm stands are not as good as the local ones, but they offer a reminder and convenient option to eat healthily.

New York City — formerly a humid continental climate — is now within the humid subtropical climate zone. The city has met the National Climate Assessment’s requirements to classify as humid subtropical for the past five years.

What do those requirements entail?

  • Temperatures have averaged above 72 degrees in the summer
  • Higher than 27 degrees in the winter.
    During the first three months of this year, the average temperature in Central Park was over 42 degrees Fahrenheit, the director of the National Oceanic and Atmospheric Administration’s Northeast Regional Climate Center.

Newer climate maps place NYC inside of the subtropical zone and instead of the humid continental warm summer climate zones similar to Pittsburgh and Chicago.  This makes sense when you look at vegetation and plant hardiness zone maps. NYC’s native birch and sugar maple trees are NOT flourishing in the heat while plants and trees that have historically thrived in Southeast Asia and South America are loving the weather.

The main culprit is assumed to be climate change. Climate zones around the world are shifting at an alarming rate. dievca expects her steaming concrete jungle to continue to get warmer. Per one study’s estimation, by 2050, the city could be as hot as Alabama. But who knows what will happen after COVID-19.

CAJUN SHRIMP PASTA

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 tablespoon kosher salt
  • 8 ounces penne pasta
  • 1 pound raw shrimp deveined, cleaned, tail removed
  • 2 tablespoons cajun seasoning *see note below
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese

Instructions

  • Add salt to a pot of water and bring to a boil. Cook pasta to al dente doneness. Before draining, scoop out at least 1/2 cup of the cooking water. Drain pasta and set aside.
  • While the pasta is cooking, cook the shrimp and sauce. Combine shrimp with cajun seasoning and olive oil in a bowl. Toss to combine.
  • Heat large skillet over medium-high heat. Add butter and melt. Add shrimp in a single layer and cook until golden brown on each side, turning only once. You may have to cook shrimp in two batches to allow enough room. Once done cooking, transfer cooked shrimp to a clean plate and reduce heat to medium-low.
  • Add heavy cream to pan and scrape bottoms to release any food that is stuck to the bottom. Allow the cream to bubble. Reduce heat to low and stir in parmesan cheese to melt. Add cooked pasta and shrimp and stir to coat. If the sauce needs to be thinned, add pasta water, one tablespoon at a time until desired consistency is achieved.

Cajun Spices (if needed)

Ingredients

  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon freshly ground pepper
  • 2 teaspoons onion salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes

Instructions

  • Combine all spices in a small bowl. Use as a dry rub on poultry, beef, shrimp, etc. You can also add to sauces and soups. Store in an airtight container.

Notes

Makes 1/4 cup
Equal portions of onion powder and kosher salt can be used in place of onion salt

Reaping the benefits of a Quarantine

Have you gained anything positive from the Quarantine?

We know the bad news:
People have died. People have been very ill, lost jobs, been furloughed.
Businesses closed, economies collapsing.

Loneliness. Depression.

Has anything positive happened?
CO2 emissions dropped.
Wildlife came back to heavily used and populated spaces. One can hear the birds chirping at 4:30 am in NYC.
Some businesses which were on the verge of collapse received a reprieve with Federal Aid or were able to file for bankruptcy in a less messy manner.
In NYC, Animal Shelters had most of their animals adopted.
Some Family and Friends grew closer than they ever expected.

dievca’s body has been healing.
Yes, there are age issues and lurking injuries that won’t disappear, but their impact has lessened – immensely.
dievca has been able to assess, have the time to fix and strengthen her body.
The time in quarantine has been a godsend to dievca and she feels a bit guilty about it. Catholic guilt.

Well – with dievca’s healing – she’s dusted off her road bike and has started cycling Central Park with Master.

Coffee – How much is the “right” amount?

Four cups of strong coffee a day might be the recipe for a healthy heart, especially for older adults.

That amount may vary from person to person – but it seems to be a good solid number. Also, note that though caffeine is the first thing that comes to mind when you think about coffee, it also contains antioxidants and other active substances that may reduce internal inflammation and protect against disease.

The following focuses on caffeine intake – about 250 – 350 mg a day.

A team of German researchers, led by the molecular biologists Judith Haendeler and Joachim Altschmied, thinks it has discovered clues about how coffee works its caffeine-fueled magic on our heart health and how much caffeine we should drink each day to see the best benefits.

By studying caffeinated lab mice and dosing human tissues with caffeine, the researchers discovered how a jolt of the stimulant could improve the way cells inside our blood vessels work — essentially, by making certain proteins inside older adult cells perform more like young and nimble ones. The study was published Thursday in the journal PLOS Biology.

“When you drink four to five cups of espresso,” Altschmied told Business Insider, “that seems to improve the function of the powerhouses of our cells, and therefore seems to be protective.”

Scientists have for years noticed that people who drink coffee seem to be less likely to die from all sorts of causes, including heart disease, stroke, or diabetes. Perhaps the best evidence yet for this comes from two massive studies: one of more than 400,000 people in the US by the National Institutes of Health, and another of more than 500,000 Europeans. Both studies found that regular coffee drinkers were less likely to die from any cause than people who don’t sip a daily brew.

Coffee is also associated with a whole host of other health benefits, including a lower risk of liver disease (cirrhosis), a lower risk of developing certain kinds of cancer, lower rates of dementia and Alzheimer’s, and a reduced risk of depression. It’s also great for your heart — people who drink three or four cups a day may be 19% less likely to die from cardiovascular disease.

Altschmied said he hoped his new study would debunk the old advice that people with heart problems shouldn’t drink coffee, and he argues that drinking the equivalent of about four shots of espresso a day could help reduce the risk of heart attacks, especially for people who are obese or prediabetic.

“It will not replace other things,” he said. “Keep on doing your sports, eat healthily, and add coffee to your diet.”

If you don’t like the taste, green tea has similar levels of caffeine and could also be an effective way to boost heart health.

It’s important not to overdo it with the new recommendation, as too much coffee can quicken your heartbeat and cause other health problems. But drinking up to six cups a day should be OK, cardiologists say, and may even reduce arrhythmias in people with irregular heartbeats.

One caveat: The study wasn’t done in humans — only in human tissues and lab mice. What works in a hyper-controlled environment of mice, dosed with very specific amounts of caffeine, may not be the same as what happens when you drink a cup of joe at home.

“If I had four cups of espresso and you had four cups of espresso, we cannot guarantee that we reach the same level in the blood,” Altschmied said.

He also offers a word of caution: Because caffeine can make blood vessels grow, providing more oxygen to fuel tumors, the coffee-drinking advice might not hold for people who have cancer.

“Where people have a diagnosed tumor, we would say better take your hands off the coffee,” Altschmied said. “But if you’re otherwise healthy, it will not harm you, and it might help your heart and circulatory system stay better functional for a longer time.”
